Caribbean Coleslaw, Healthy Recipe

1 bag shredded cabbage or Cole slaw
1 cup diced pineapple
4 scallions, thin sliced
1/4 cup slivered almonds
1/2 cup chopped cilantro
Vinaigrette:
1/2 cup olive oil
1/4 cup lime juice
1/4 cup apple cider vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon pepper
Mix all cabbage, pineapple, scallions, almonds, cilantro.
Whisk together vinaigrette.
Pour vinaigrette over Cole slaw mixture and stir to combine. For best results refrigerate 1 hour before serving.
